Resting
Allow the chicken to rest for 5–10 minutes before carving to keep it beautifully juicy.
Chef's Tips
- Cook over medium heat to allow the peri-peri marinade to caramelise without burning.
- Baste occasionally with the cooking juices for extra flavour.
- Finish over direct heat for beautifully crisp, golden skin.
- Serve with fresh lemon wedges to enhance the peri-peri flavours.
Serving Inspiration
Serve your Peri-Peri Chicken Flattie with:
- Portuguese-style chips
- Braaibroodjies
- Fresh corn on the cob
- Coleslaw
- Mrs H.S. Ball's Original Chutney for a uniquely South African twist
Wine Pairing
A chilled South African Sauvignon Blanc or a fruit-forward Rosé pairs beautifully with the vibrant peri-peri flavours, while a lightly chilled Shiraz is an excellent choice if you prefer red wine.
Braai Master's Tip 🇿🇦
Cook your flattie slowly over medium coals with the lid closed where possible. This allows the peri-peri marinade to develop a rich, smoky flavour while keeping the chicken wonderfully moist. Finish over direct heat for irresistible crispy skin.
