About This Product
Our Buffalo Tenderloin Fillet Steak is one of the leanest and most tender cuts in our exotic meat range. With a rich, beef-like flavour and a slightly sweeter finish, buffalo offers a delicious alternative to traditional beef while remaining naturally lower in fat.
Expertly prepared and frozen to lock in freshness, this premium 225g fillet is perfect for anyone looking to try something a little different without compromising on quality or flavour.
Flavour Profile
- Flavour: Rich, similar to premium beef with a subtle sweetness.
- Texture: Exceptionally tender.
- Leanness: Very lean.
Best served: Medium-rare to medium.
Defrosting Instructions
For the best results, remove the steak from the freezer and thaw overnight in the refrigerator.
Once defrosted, remove from the fridge around 30 minutes before cooking to allow it to come up to room temperature.
Do not refreeze once thawed.
Best Cooking Method
Buffalo fillet is best cooked in a hot frying pan, on a griddle, or over a charcoal braai.
Lightly brush with oil and season simply with sea salt and freshly cracked black pepper to allow the natural flavour of the meat to shine.
Cooking Guide
Medium-Rare (Recommended)
- Sear for 2½–3 minutes per side
- Internal temperature: 54–57°C
Medium
- Sear for 3–4 minutes per side
- Internal temperature: 60–63°C
Because buffalo is naturally lean, we do not recommend cooking beyond medium as it can become dry.
Resting
Allow the steak to rest for 5–10 minutes before slicing and serving.
Chef's Tips
- Pat the steak dry before cooking to achieve a beautiful caramelised crust.
- Cook over a high heat and turn only once.
- Slice across the grain for maximum tenderness.
- Finish with a knob of butter during the final minute of cooking for added richness, if desired.
Perfect With
Complete your South African-inspired meal with:
- Jimmy's Steakhouse Sauce
- Ina Paarman's Pepper Sauce
- Robertson's Braai & Grill Seasoning
- Mrs H.S. Ball's Original Chutney
Wine Pairing
A full-bodied South African Cabernet Sauvignon or Shiraz pairs beautifully with buffalo, complementing its rich flavour while balancing its lean texture.
Braai Master's Tip 🇿🇦
Buffalo is incredibly lean, so a hot cooking surface and a shorter cooking time will give the best results. Resist the temptation to overcook it—the reward is a beautifully tender steak with outstanding flavour.
